If you have food intolerance then it is likely that you have to go without many things, among them, no doubt, cakes. A start-up in Germany, however, understands your situation and is now selling cakes in a jar that are free of many of the ingredients which lead to intolerance.
What could be more typically German than coffee and cake in the afternoon? But people who eat gluten-free diets, cannot tolerate lactose or have a fructose intolerance, are often left with nothing other than black coffee in the end. This is the situation that the start-up, Elikat from Neu Wulmstorf, Lower Saxony, wants to change, producing cakes for people with food intolerances.
The founder, Katrin Lange, has herself had several intolerances for a number of years. When invited to parties, she always took her own cake with her. The problem: there are virtually no brands that produce vegan, gluten-free, low-fructose and lactose-free baked goods, according to the 34-year-old. Because of this, Lange founded Elikat in mid-2015.
The “free-from” cake she is making is sold in a jar for longer shelf life. Seven different flavours are available, such as chocolate or lemon. Elikat cakes do not contain gluten, lactose or fructose and are free of preservatives, artificial flavours and yeast. The actual baking is done by a master baker in Hamburg. Each cake is 145 grams and costs €4.95. In addition to the ready-baked products, Elikat also offers baking mixes.
One of Elikat’s trading partners is the supermarket chain Edeka, where the products are for sale in a number of branches. However, Elikat sells most of its product via its online shop. According to the founder, Elikat has so far sold more than 3,000 cakes this year. Compared to 2016, the one-person start-up has quadrupled its sales. The founder did not want to go into detail, and so far the start-up has been self-funded. Lange believes that the market is difficult to estimate and calculate because of its niche existence, but she believes the is hug untapped potential.
